Now that Raphael is almost 1, he is eating like a champ. I really think he could eat all day long if he could. But I have started to realize that he is getting bored of foods if we give them to him too often. One food he is done with is scramble eggs. Me and my boyfriend are not huge breakfast fans so I usually make something more nutritious for Raphael and a sandwich or something quick for us. But when Raphael started throwing the scramble eggs, cheese, and cereal to the floor I started re-thinking our breakfast menu.

So yes, lately I’ve been stressing about what to give my family for breakfast. I really do not like having to wake up super extra early to make breakfast, and somehow I am always late for work no matter how early I wake up. Because you know.. Something always happens. So I started thinking – What can I make in batches and save for days, its delicious, and nutritious? Well, after giving it some thought I came up with an amazing idea – Apple Cinnamon Protein Muffins!

To make these delicious Apple Cinnamon Protein Muffins, you first have to get all the ingredients ready…
Mix the dry ingredients in a bowl and in a separate bowl mix the wet ingredients.
Then slowly add the mixed wet ingredients to the dry. Last but not least, add the diced apples.
Place them on the muffin sheet and bake them on 375 for 20 minutes. See!? easy-peasy. You now can make a delicious, nutritious and practical breakfast for your family and yourself.
- 1½ cups oat flour
- ½ cup old fashioned oats
- ½ cup Nestlé Carnation Breakfast Essentials - Vanilla
- 1 tablespoon Cinnamon
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- Pinch salt
- ⅓ cup honey
- 2 cups plain Greek yogurt
- 1 egg
- 3 tablespoons butter, melted (unsalted)
- 1 cup diced apples
- In a large bowl, combine oat flour, Nestlé Carnation Breakfast Essentials - Vanilla, oats, baking powder, baking soda, salt, and cinnamon.
- In a medium bowl, whisk yogurt, egg, melted butter, and honey.
- Slowly incorporate the wet ingredients into the dry ingredient bowl and stir until just combined
- Gently fold in diced apples to the batter.
- Fill muffin tins to ¾ full and bake for 20 minutes.
- Remove from oven and allow muffins to cool down.
