New year, new goals right? Breakfast is the most important meal of the day. And in my opinion, the way you start your day sets the tone to how the whole day will turn our so if I start my day making a healthier decision, I’m much more aware of what I’m eating throughout the day and I am more likely to make good food choices.
Did you know…? Those who eat breakfast are less likely to be overweight and more likely to be within their ideal weight range. If you skip breakfast, you’re more likely to reach for high sugar and fatty snacks mid-morning. That is why I am sharing this quinoa breakfast bowl. It is one of my favorite breakfasts because it’s warm, satisfying, packed full of protein and keeps me full until lunch time.
For this recipe I got all of my ingredients from Walmart. One of the most important ingredients is Silk Almond Unsweet Vanilla Half Gallon, it gives a simple and great tasting flavor all with natural ingredients.
Silk Almond Unsweet Vanilla contains 50% more calcium than milk and it is low in calories, so it is perfect for the new year new goal mentality. Health is hard, but feeling healthier doesn’t have to be. 1/2 cup of quinoa
2/3 cups water
2/3 cup Silk Almond Unsweet Vanilla Half Gallon
1 teaspoon cinnamon
Pinch of nutmeg
2 tablespoons pepitas
1 tablespoon coconut flakes
1 tablespoon cranberries
Finish with chia seeds, banana and coconut flakes.
– Combine Quinoa, in a medium sauce pan, with water and Silk Almond Unsweetened Vanilla.
– Bring to a boil
– Add cinnamon, nutmeg, pepitas, shredded coconut and golden raisins.
– Reduce heat to low and simmer for 15-20 minutes, or until quinoa softens.
– Serve hot.
– Topped with banana, Chia seeds, and coconut flakes. (Add maple syrup or honey to make it sweeter if you would like)
