Who doesn’t love a quick, easy, and healthier recipe? In this post I will be swapping 3 ingredients in order to make this Sheet Pan Chicken Fajita recipe lighter but just as delicious and easy! The first step for making this recipe better-for-you is making your own fajita seasoning. Making your own seasoning helps you control the amount of salt and eliminates the preservatives you sometimes find in pre-packaged seasonings. The second is using Mazola® Corn Oil. Why? This Sheet Pan Chicken Fajitas recipe has definitely become a go-to dinner at my house! It has all the Mexican flavors we obsess over. They are extremely easy to put together and even better, it is also extremely easy to clean up. Sounds like another Mom win to me.
First things first, let’s make the fajita seasoning:
Ancho Chile Pepper, Chipotle Chile Pepper, Chili Powder, Garlic powder, Paprika, Cumin, Coriander, Pepper, and finally Salt.
Now let’s get to prepping and cutting the peppers, the onion and the chicken.
In a bowl, mix the peppers, the onion, and the chicken.
Add the Mazola® Corn Oil and the fajita seasoning.
Rather than pan-fry things like Chicken Fajitas in other oils, I started baking many of our meals with Mazola Corn Oil. I love that Mazola Corn Oil is an all-purpose cooking oil and is the smart heart-healthy choice for your family. I can bake, grill, sauté, stir frying, or even make a dressing. Mix it all!
Place the seasoned chicken, peppers and onions in a sheet pan. Once in the sheet pan, squeeze a lime over it.
Place the sheet pan in the over on 395°F for 35 minutes.
Now the fun part! Putting together our plate.
I love having these Chicken fajitas with lettuce. I live for that crunch the lettuce brings to the meal, and it is healthier, so yay!. I also top it off with diced tomatoes, diced white onion and a little bit of green onion… and TADA!
