I will share with you one of the easiest, most flavorful, and meatless recipes – Slow Cooker Minestrone Soup! because Who doesn’t like a good Minestrone!? Its filling, it is tasty and it is perfect for Lent!

I love this Slow Cooker Minestrone Soup because it is so easy. You only need a few ingredients, and You can make it in the Slow Cooker. Which means, You can make lots of it and You have to do little to no cooking! Another reason why I love to make this soup is because my fiance and my son absolutely love it. They can eat bowls after bowls. It is incredible!
OK! Let’s get to work. You only need the following ingredients –
But since I care about you, I will tell you the real secret to this recipe – Knorr® Tomato with Chicken Flavor 2.2 lb (Granulated Bouillon)! Knorr® Bouillon gives all dishes an amazing and unique flavor. Always leaving you wanting more! Knorr® bouillon is perfect for many dishes! I actually use it all the time and for so many different recipes, not only soups or stews. That is why I used the 2.2 lb version of the Knorr® Tomato with Chicken Flavor Granulated Bouillon… Believe me with Knorr®, you will not feel like you are sacrificing flavor just because you are not including meats/poultry.

Since this is a Slow Cooker recipe you know this is all very easy…
Add the cut Celery, cut Carrots, smashed Tomatoes, chopped Onions, Basil, Thyme, and Diced Tomatoes to the slow cooker.
Add Knorr® Tomato with Chicken Flavor
Add 6 cups of water and stir!
Cover and let it cook on high for 3.5 hours.
Add the the pasta, the beans, diced potatoes, diced zucchini, and cut cabbage and let it cook on low for an extra hour!
And there, all done and ready!

- 1/3 cup Knorr® Tomato Bouillon with Chicken Flavor (Granulated Bouillon)
- 1/2 cup of chopped Carrots
- 4 Tomatoes – Chopped and smashed
- 1 Medium Onion
- 3 chopped Celery stems
- 1 cabbage
- 1 Zucchini
- 3 small peeled and chopped potatoes
- 2 Basil leaves
- Fresh Thyme
- Pasta of your choice
- Beans of your choice – I got Cannellini Beans
- Garlic, Salt and Pepper to taste
- Chop – Carrots, tomatoes, onions, celery and put them on the slow sooker.
- Add Garlic to taste
- Add Knorr® Tomato Bouillon with Chicken Flavor
- Add 6 cups of water and stir.
- Cover the slow cooker and let it cook for 3 and a half hours on High.
- Once that is done, add the diced potatoes, the diced zucchini, cut cabbage, and beans to the slow cooker.
- Cover again and let it cook for another hour to hour and half on High.
